Joan's Salsa

One highlight of the retreat was Joan C.'s Addictive Salsa. She graciously agreed to share her recipe.

1 can shoepeg sweet corn, drained (in the grocery store near the regular canned corn)
1 can black-eyed peas, drained
1 small jar chopped pimentos, drained
1 red onion, diced
1 jalapeno, seeded an diced (optional)
1 red, green, yellow or orange pepper, seeded and diced

Mix all of the above in a bowl with this marinade:

1/2 cup oil
1 cup vinegar
2/3 cup sugar
1 Tablespoon Tiger Sauce (by the Tabasco)
Salt and pepper to taste

Marinate 2-3 hours or overnight. Drain before serving.
